Farm & Market: Denver's Indoor Farm & Award-Winning Kitchen

It's where fine-dining flavors meet everyday prices, where sustainability meets practicality, and where locals and tourists alike can experience food as it was meant to be: nutritious, fresh and impressively local.

In the heart of Denver's vibrant RiNo district, an innovative culinary concept is redefining what fresh, sustainable dining truly means. Farm & Market isn't just another farm-to-table restaurant - it's a place where the farm and table exist under the same roof, separated by a mere five feet and a stunning 60-foot glass wall.

This first-of-its-kind venue combines a chemical-free hydroponic farm producing over 100 pounds of fresh produce daily with an award-winning restaurant that has quickly become one of Denver's most exciting culinary destinations.

Founded by Davis, the head farmer, and Austin, the chef, Farm & Market represents the perfect marriage of agricultural innovation and culinary expertise. Whether you're a foodie seeking Denver's next great dining experience, an environmentally-conscious eater, or simply someone looking for a unique attraction in the Mile High City, Farm & Market offers something truly special that you won't find anywhere else.

What Makes Farm & Market So Special?

The concept of Farm & Market is a special one. It is indeed so novel that many customers who visit struggle to understand the concept. Caroline, Sales Lead at Farm & Market touched on this perfectly:

People think we are only a farm selling to grocery stores. They eat in the restaurant and ask where the amazing produce comes from - even though they dined in front of a 60’ glass wall showcasing the farm.

People don’t understand that a farm-forward menu can be culinary and filling. People don’t understand what sustainable and chemical-free really means. People are intimidated by the produce available for sale to eat at home. There’s so much to tackle!
— Caroline, Sales Lead at Farm & Market

They’re much more than a farm and restaurant too! Farm & Market offer catering, they have an online shop as well as everything that happens in-store - from salad dressing, toppings and even kits to promote healthy eating at home.

Farm & Market by numbers

Here's a closer look at the numbers:

  • Contains 100% of the flavor and nutrition from the produce on your plate at Farm & Market.

  • The restaurant has won 5 culinary awards!

  • Fresh produce is available from Farm & Market 365 days of the year.

  • The Farm & Market farm saves 90% of water compared to traditional farms.

  • 0 chemicals are used at Farm & Market. They pride themselves on being 100% chemical free - most organic farms use synthetic pesticides, incase you didn’t know!

  • The benefits of sustainable practices and being uplifted by food is unmeasurable!

The Farm

Unlike traditional farms that operate seasonally, founder Davis has engineered a perpetual growing system - planting, growing, and harvesting a fraction of every crop daily, 365 days a year, regardless of outside weather conditions.

The vertical growing towers showcase plants at various development stages, their roots sitting in nutrient-rich water rather than soil. What's notably absent are chemicals and pesticides; Farm & Market operates completely chemical-free, exceeding organic standards. This controlled environment accomplishes remarkable efficiency, using just 10% of the water required by traditional farming - a significant achievement in water-conscious Colorado.

This has been designed to deliver perfectly fresh produce with maximum flavor and nutrition, harvested just hours before reaching your plate, traveling a mere five feet from farm to table.

The Dining Experience

The dining area offers guests a front-row seat to food production unlike anywhere else in Denver, as aforementioned, a 60-foot glass wall showcases the hydroponic farm where your meal began its journey just hours before.

Farm & Market has quickly established itself as a culinary-powerhouse, collecting an impressive array of accolades including placement on Westword's prestigious "100 Best Restaurants in Denver" list. Their impressive trophy case also includes recognition for "Top 10 New Restaurants 2023," "Best Fresh Salads 2024," "Best Caesar Salad 2024," "Best Soups 2024," and "Best Sustainable Practices 2024" from publications like Westword, 303 Magazine, and Slow Food.

What truly sets the dining experience apart is the freshness of every dish. While most produce travels an average of 1,500 miles to reach your plate, at Farm & Market, your greens travel just 5 feet from farm to fork. This means you're enjoying 100% of the flavor and nutrition, compared to other leafy greens and herbs in town that retain 50% or less after the typical 7+ days it takes to reach your meal. This farm-to-fork philosophy translates into vibrant flavors that simply can't be replicated elsewhere.

Despite the fine-dining feel, almost every item on the menu comes in under $15. From their award-winning Caesar salad to hearty soups that showcase the best of seasonal ingredients, the menu delivers culinary excellence without pretension. Farm & Market also offers a selection of wines and beers with a daily special: $2 off all wine and beer everyday from 2-6pm Monday to Friday, and all-day on weekends! It's the perfect excuse to linger a little longer in this uniquely sustainable space.

Farm & Market extends its mission beyond the dining experience, their marketplace offers the opportunity to bring the same farm-fresh produce home. They have over 120 local Colorado grocery products, as well as produce grown and made in-house, designed to help lead a healthy and fulfilled life at home.
