When KAYAVA's founders met renowned ramen craftsman Masuo Onishi, they knew they'd found something special. Onishi has built a reputation for authentic Japanese ramen both in Japan and internationally. His philosophy matched their vision perfectly - blend tradition with innovation, never compromise on quality, and share real Japanese flavors with the world.

That meeting sparked KAYAVA, a ramen shop that's been winning over Seattle's food scene since opening in Fremont last fall. Now, with a second location opening in Belltown, we’re excited to hear they are bringing their from-scratch approach to even more of the city!


Made the way it should be

Walk into KAYAVA and you'll immediately feel this place is different!

Every bowl starts with broth that's been simmered for hours to develop the crazy rich flavors. The noodles are also made from scratch in-house (of course, you say!) But did you know that the bowls themselves, which are unique custom Arita-ware from Japan, are warmed before serving? This keeps your ramen at the perfect temperature from first bite to last.

"All of our ramen is made from scratch with care and dedication," the team explained to us. "From the noodles to the soup, every bowl is crafted with time and intention."

This commitment to doing things right shows up in unexpected ways.

Take their vegan ramen, which has become one of their most popular items, despite vegan ramen being relatively uncommon in Japan. When customers asked for a vegan option after opening, the KAYAVA team didn't hesitate. Instead, they developed a dish that's now enjoyed by everyone from vegans to health-conscious diners to people with dietary restrictions! Today, it’s a bowl the team confidently recommends to anyone, vegan or not.

Two neighborhoods, one mission

The city of Seattle stood out to the team early on, not just as a food city, but as a place full of curious eaters. That curiosity made Seattle feel like the right place to introduce ramen rooted in tradition, but not stuck in it.

Fremont became the natural starting point. Known for its creativity, art, and cultural openness, the neighborhood embraces diversity and experimentation while still valuing craft.

“We deeply resonated with the character of the people here,” they share about choosing Seattle. “The community appreciates the dedication behind what we do.”

Now, they’re getting ready to open their second location in Belltown! The neighborhood’s constant mix of locals, downtown workers, and visitors makes it a natural next step as KAYAVA begins to introduce its ramen to a wider part of the city.

A local shop worth knowing

KAYAVA’s connection to Seattle goes beyond their own kitchen. When asked about other local spots they love, the team pointed to Mixed Pantry, a nearby shop known for its hard-to-find Asian seasonings and sauces. It’s a place they genuinely enjoy visiting - not just for ingredients, but for the experience itself!

They mentioned how welcoming and knowledgeable the owner is, always happy to explain products in detail. It’s the kind of shop that makes exploring food feel approachable, and a reminder of how much KAYAVA values being part of a broader, supportive local food ecosystem.

A Menu Built To Adapt

KAYAVA’s menu is rooted in Japanese tradition, but it isn’t rigidly Japanese. The team believes honoring ramen’s roots also means responding to the community around them, which is why the menu makes room for both classic bowls and more modern options.

We agree with the team…if you try one thing, make it the Spicy Chicken Paitan Ramen! The broth is simmered until it’s fully emulsified - creamy and layered, with heat that builds without taking over.

Longer term, the team hopes to share Japanese flavors and food culture beyond Seattle. But expansion is about staying true to what works, respecting local communities, and growing sustainably. Seattle may be the beginning, but it’s not where the story ends!
